Responsible for reworking concept menus, kitchen design, equipment, <br />training for all aspects of food service, as well as purchasing for company and setting up <br />all contracts with vendors. In three years, sales for the company more than doubled from <br />26m to over 50m, and net profitability went from lOOk to over 5.4m, with existing <br />units. Organized operations to establish budgets, SOP manuals, recipes and kitchen <br />manuals, food product guides, and focused heavily on execution within restaurants. Created many new concepts to be used in the Aladdin Hotel <br />and Casino, as well as compete with major foodservice chains across the country. One <br />notable concept is the Earl of Sandwich, a sandwich concept created to earn market share <br />against the aging Subways, and to gain strong market share in the growing sandwich <br />demand through quality, speed, and pricing.
