Celia NUllO, Sellior Vice Presidellt, Admillistratioll alld Compliallce - Celia Nuno has extensive experience in health care, over 23 years, specitically in the managed care industry. Currently Mrs. Nuno is the Scnior Vice President of Administration and Compliance with direct oversight of Compliance and Customer Service. Prior to ILS. Mrs. Nuno was the Vice President of Claims and Customer Service for Vista 1-Ic~llth Plan. a Florida-based HMO with over 250,000 members. Mrs. Nuno also workcd tor Beacon Health Plans. where she had direct responsibility tor seven (7) administrative departments since the inception of the plan. She also worked tor Neighborhood Health as Vice President of Administration, where she also came in at the inception and developed all the processes, policies and procedures tor the plan's administrative functions. Mrs. Nuno also worked tor Cigna Health Plan tor 10 years where she developed the Customer service Unit and supervised the Sales administration staff. Orlalldo MOllteagudo, Vice Presidellt, Mea/s Divisioll - Mr. Orlando Monteagudo is the person that will have direct ovcrsight and dircct responsibility of work for this contract. See detailed description of his responsibilities and experience below under Food Services and Management Staff tor this contract scction. lLS Group, LLC d/b/a Classic Caterers RFP No.: 11-04-01 9 Peggy O'Neill, MS, RD, LDIN, Vice President, Nutrition Services - Ms. O'Neill has signilicant e:\periencc as a Registered Dietitian managing the nutritional components of public sector programs. As the Vice Presidcnt for Nutrition Services, Ms. O'Neill designed, implemented and manages a nutrition cducation program for over 1,500 Humana dual eligible members. The program includes monthly follow-up with the members, and quarterly nutrition education reviews and satisfaction surveys. Ms. O'Neill holds a Graduate Certificate in Gerontology and has experience in research and working with older adults prior to ILS. As a Graduate Student she participated in a HUD Health Promotion Project organized by the Centcr on Aging at FlU. Funded by the Department of Education, the program provided counseling and organized food distribution to HUD residents. In addition, the program administered educational sessions on gencral health. nutrition education, physical activity. and medication review. She has also worked for the Center on Nutrition, Aging, and Physical Activity at FlU as a Graduate Assistant and participated in research. issue panels. and testimonials. Ms. O'Neill will work with the American Red Cross as necessary to l~nalize mcnus. and implcment any nutrition or food safety education that may be necessary. Hugh Chang Alloy, Chief Financial Officer - Mr. Chang-Alloy has a Bachelor's of Science in Accounting from Florida International University; and a number of certif~cations and memberships in accounting. Mr. Chang-Alloy is the Chief Financial Oflicer for Independent Living Systems. LLC since January 200S. Mr. Chang-Alloy directs the organization's tinancial planning and accounting as well as has established relationship with lending institutions, shareholders, and the l~nancial community. He oversees and dirccts treasury, budgeting, audit. tax, accounting and purchasing activities throughout the organization. Mr. Chang- Alloy directs the Controller in providing and directing procedures and systcms nccessary to maintain proper records and to afford adequate accounting controls and services. He further directs the activities as custodian of funds, securities and assets; and appraises the organization's financial position and issues periodic financial and operating reports. .lames P. Henderson, Chief Information Officer - Mr. Henderson is an experienced management professional with over 15 years of e:\perience in health care data management and business operations. lie has successfully managed all aspects of enterprise-wide health care solution development. including analysis. design and deployment of stand-alone, and n-tiered Web-based and Client/Server software applications. His skills include needs planning, team building, project management, resource allocation, and staff management. His relevant experience includes Medicaid Management Information Systems (MM IS). managed care information systems, data warehouses, electronic health records and other large-scale c1aUl management proj ects. Food Scrvice and Management Staff: The following individuals will be responsible for your food service management and operations: Orlando Montea!.!udo, Vice President, Meals Division - Mr. Orlando Monteagudo is thc pcrson that will have dircct oversight and direct responsibility of work for this contract. Mr. Montcagudo is responsible for day-to-day operations of the Meals Division, including purchasing, inventory, delivery logistics. call center management and customer service, f~nancial performance, cost managemcnt and analysis. He is also responsible for supporting marketing activities across lincs of business, including the development and preparation of proposals/plans company-wide. He conducts initial contact, analysis, due diligence and negotiations with potential strategic alliance partners including evaluation of potential mcrger or acquisition candidates. Mr. Monteagudo assists in the management of the operations of the company's food services operations, and its subsidiaries Classic Caterers and Meals of the Century. A copy of his resume is included herein. He has over 17 years of operational management and 22 years of experience in the food service industry. He served as executive chef of Areas USA. Inc. at Miami International Airport for over four years, and has extensive experience as a chef in other organizations. Responsibilities include day to day operations of the facility and coordination of all menus. compliance with program regulations and standards, management, personnel developmcnt and supervision. Mr. Bhasin will serve as the Food Service Manager for this contract and devote thc necessary time to the execution and maintenance of this contract. He will be responsible for all direct coordination for this contract in charge of directing all the on-site acti vities during and after the events. ivlr. Bhasin's Resume is Attached. Patricia Pinkerous, Food Service Coordinator - Ms. Pinkerous has served as the Food Service Manager for Classic Caterers for over 11 years overseeing the delivery, unpacking and storage of all types of food and food service supplies and equipment. She has extensive experience in the planning, scheduling. assigning. reviewing and evaluating work. training personnel and disciplining staff. and enforces safety regulations. COllsuelo NUllez, Assistant Chef - Mr. Nunez has been the Assistant Chef for lLS Group, LLC d/b/a Classic Caterers for approximately one year. She previously was a chef of LGF Luftansa Airlines at the Miami International Airport. She is able to spot problems and resolve them quickly and efficiently and delegates many kitchen tasks simultaneously. She is rcsponsible for approving all preparcd food itcms that leave our kitchen working closely with the Operations/Food Service Manager. Drivers: Comprehensive fleet of vehicles and pool of qualified drivers. All drivers have received a background prior to hire and receive continuous training to educate and prepare them in interacting with thc older adult population, such as sensitivity training. Thc Project Team's management approach establishes the five essential functions of management as planning, organizing, staffing, directing and controlling. The final function of control is the process validating whether things occur in accordance with the original plan. In essence, control means success or failure of the operation. We must maintain control of situations at all times. We must be in control of our employees, and our employees must maintain strict self-control at all times. We believe that controls must be economical, meaningful, appropriate, timcly, simple and operational. This control we maintain in our food service operation will be built around these specifications. · Overall organization to completing the project Consistency in leadership, quality of food and service and in cost control requires standardizcd programs. which are understood and used by all facilities. The Project Team uses standardized programs at all units. These programs include, but are not limited to, financial systems for meal counts, inventory controls and profitability analysis, menu systems for development and implementation, nutritional analysis, recipc quantification. order guides and production worksheets and staffing systems to determine scheduling and labor patterns. We have achieved success through consistency by using a centralized form of management combined with giving our individual units the responsibility and authority to establish, monitor and supcrvise operating policies. We work closely with our clients to ensure quality and customer satisfaction before, during and after the event. · Proposed site plan lLS Group, LLC d/b/a Classic Caterers will ensure to comply with the specifications and requirements or this RFP, as it relates to the site plan provided under Section 3.12 and parking specifications provided under Section 3.10. We will arrive with sufficient time for set-up on the day of the event. In regards to the chicken, as I said there were some of the guests who stated that the chicken was not fully cooked through, although myself I did not get to sample the chicken, we would like to make sure that indeed it is cooked thoroughly. Also could the portions be a bit smaller. As I stated, I will be using a ticket system for the meal. The theme this year is "Around The World" .
