We do not typically engage any subcontractors for catering events. We have in-house staff and capabilities required to perform the services of this solicitation. Our services adhere to the highest standards. We have in place managers that are familiar with the standards of operation and the criteria for success. We understand that the continuing success of each catering event is measured by a number of factors. These factors include control, consistency, cost effectiveness, support services and flexibility. We know that all functions of a catering event are part of an interactive system, and that these interactions result in a ripple effect being created from every event. Mr. Plana has consistently employed creative methods to assess a situation, synthesize information and develop and implement strategies that achieve successful outcomes in the catering, nutritional and managed care field. Mr. Plana has oversight of all functions of ILS Group, LLC d/b/a Classic Caterers. Celia Nuno, Senior Vice President, Administration and Compliance - Celia Nuno has extensive experience in health care, over 23 years, specifically in the managed care industry. CUlTently Mrs. Nuno is the Senior Vice President of Administration and Compliance with direct oversight of Compliance and Customer Service to ILS and its affiliates. Prior to ILS, Mrs. Nuno was the Vice President of Claims and Customer Service for Vista Health Plan, a Florida-based HMO with over 250,000 members. Mrs. Nuno also worked for Beacon Health Plans, where she had direct responsibility for seven (7) administrative depmiments since the inception of the plan. She also worked for Neighborhood Health as Vice President of Administration, where she also came in at the inception and developed all the processes, policies and procedures for the plan's administrative functions. Mrs. Nuno also worked for Cigna Health Plan for 10 years where she developed the Customer service Unit and supervised the Sales administration staff. Hugh Chang Alloy, Chief Financial Officer - Mr. Chang-Alloy has a Bachelor's of Science in Accounting from Florida International University; and a number of certifications and memberships in accounting. Mr. Chang-Alloy is the Chief Financial Officer for Independent Living Systems, LLC since January 2008. Mr. Chang-Alloy directs the organization's financial planning and accounting as well as has established relationship with lending institutions, shareholders, and the financial community. He oversees and directs treasury, budgeting, audit, tax, accounting and purchasing activities throughout the organization. Mr. Chang- Alloy directs the Controller in providing and directing procedures and systems necessary to maintain proper records and to afford adequate accounting controls and services. He further directs the activities as custodian of funds, securities and assets; and appraises the organization's financial position and issues periodic financial and operating repOlis. James P. Henderson, Chief Information Officer - Mr. Henderson is an experienced management professional with over 15 years of experience in health care data management and business operations. He has successfully managed all aspects of enterprise-wide health care solution development, including analysis, design and deployment of stand-alone, and n-tiered Web-based and Client/Server software applications. His skills include needs planning, team building, project management, resource allocation, and staff management. His relevant experience includes Medicaid Management Information Systems (MMIS), managed care information systems, data warehouses, electronic health records and other large-scale data management projects. Food Service and Manae:ement Staff: The following individuals will be responsible for your food service management and operations: Orlando MonteQJ!lldo. Vice President. Meals Division - Mr. Orlando Monteatwdo is the person that will have direct oversie:ht and direct responsibility of work for this contract. Mr. Monteagudo is responsible for day-to-day operations of the Meals Division, including purchasing, inventory, delivery logistics, call center management and customer service, financial performance, cost management and analysis. He is also responsible for supporting marketing activities across lines of business, including the development and preparation of proposals/plans company-wide. He conducts initial contact, analysis, due diligence and negotiations with potential strategic alliance pminers including evaluation of potential merger or acquisition candidates. Mr. Monteagudo assists in the management of the operations of the company's food services operations, and its subsidiaries Classic Caterers and Meals of the Century. Ra;esh Bhasin. Operations/Food Service ManaJ!er - Mr. Bhasin has been in the catering business all his professional life. A copy of his resume is included herein. He has over 17 years of operational management and 22 years of experience in the food service industry. He served as executive chef of Areas USA, Inc. at Miami International AirpOli for over four years, and has extensive experience as a chef in other ILS GROUP, LLC d/b/a CLASSIC CATERERS RFP No.: 12-03-02 9 organizations. Responsibilities include day to day operations of the facility and coordination of all menus, compliance with program regulations and standards, management, personnel development and supervision. Mr. Bhasin will serve as the Food Service Manager for this contract and devote the necessary time to the execution and maintenance of this contract. He will be responsible for all direct coordination for this contract in charge of directing all the on-site activities during and after the events. Mr. Bhasin's Resume is Attached. Patricia Pinkerous, Food Service Coordinator - Ms. Pinkerous has served as the Food Service Manager for Classic Caterers for over 11 years overseeing the delivery, unpacking and storage of all types of food and food service supplies and equipment. She has extensive experience in the planning, scheduling, assigning, reviewing and evaluating work, training personnel and disciplining staff, and enforces safety regulations. COl1suelo Nunez, Assistant Chef - Mr. Nunez has been the Assistant Chef for ILS Group, LLC d/b/a Classic Caterers for approximately one year. She previously was a chef of LGF Luftansa Airlines at the Miami International Airport. She is able to spot problems and resolve them quickly and efficiently and delegates many kitchen tasks simultaneously. She is responsible for approving all prepared food items that leave our kitchen working closely with the Operations/Food Service Manager. Drivers: Comprehensive fleet of vehicles and pool of qualified drivers. All drivers have received a background prior to hire and receive continuous training to educate and prepare them in interacting with the older adult population, such as sensitivity training. Suitability of the methodologies and approaches used in achieving tasks Our methodology for the services to be utilized to achieve project goals includes program design, consultation and on-site management services. The Project Team's management approach establishes the five essential functions of management as planning, organizing, staffing, directing and controlling. The final function of control is the process validating whether things occur in accordance with the original plan. In essence, control means success or failure of the operation. We must maintain control of situations at all times. We must be in control of our employees, and our employees must maintain strict self-control at all times. We believe that controls must be economical, meaningful, appropriate, timely, simple and operational. This control we maintain in our food service operation will be built around these specifications. . Overall organization to completing the project Consistency in leadership, quality of food and service and in cost control requires standardized programs, which are understood and used by all facilities. The Project Team uses standardized programs at all units. These programs include, but are not limited to, financial systems for meal counts, inventory controls and profitability analysis, menu systems for development and implementation, nutritional analysis, recipe quantification, order guides and production worksheets and staffing systems to determine scheduling and labor patterns. We have achieved success through consistency by using a centralized fOlm of management combined with giving our individual units the responsibility and authority to establish, monitor and supervise operating policies. We ensure that from staffing, set-up to clean-up, we work closely with the City in order to make sure that the event is a total success. We believe coordination is key to a successful catering event. . Ability to meet desired timelines and deadlines We have extensive experience in the coordination of catering events both public and private. We have the ability to meet the client's desired timelines and deadlines due to our ability to ensure that we plan and staff the event appropriately and effectively. Additionally, ILS Group, LLC d/b/a Classic Caterers have the management suppOli structure and quality assurance team in place essential for success. We work closely with our clients to ensure quality and customer satisfaction before, during and after the event. . Proposed site plan ILS Group, LLC d/b/a Classic Caterers will ensure to comply with the specifications and requirements of this RFP, as it relates to the site plan provided under Section 3.12 and parking specifications provided under Section 3.1 O. We will arrive with sufficient time for set-up on the day of the event. We will upon notification of award and event coordinate with the City and schedule a walk-through of the site, if desired by the City and needed, to discuss and plan the set-up of all tents, equipment and staffing.
