<br /> <br />Section 3 <br />Scope of Services I Technical Specifications <br /> <br />3.1 SCOPE OF SERVICES <br /> <br />The purpose of this solicitation is to establish a contract for the purchase of catering services for <br />the City's annual anniversary party. <br /> <br />3.2 DATE OF EVENT <br /> <br />The event will be held on Sunday June 17h, 2012 for four (4) hour period sometime between the <br />hours of 12pm -9pm. <br /> <br />3.3 AMOUNT OF PLATES SERVED <br /> <br />3,500 plates served. Only one plate per person is to be served. <br /> <br />3.4 CITY STAFF <br /> <br />Staff will be served prior to the event and some during the event. Staff will wear colored <br />bracelets to identify them, and receive priority access. Access will be coordinated with staff, <br /> <br />3.5 TYPE OF FOOD <br /> <br />Below is the comprehensive menu that is requested for the event. Any alternatives to this menu, <br />must be disclosed in your proposal. <br /> <br />o Barbecue Ribs <br />o Barbecue Chicken <br />o Hot dogs (kosher - beef hotdogs) <br />o Hamburgers (10% shall be veggie burgers) <br />o Corn <br />o Coleslaw <br />o Potato Salad <br />o Beans <br />o Pasta Salad <br />o 10 Sheet Cake (With custom City design) <br />o Alternative desert (20% of the desert supplied shall be Sugar-Free) <br /> <br />3.6 COOKING <br /> <br />Catering staff shall cook on-site, but not under tents. The successful Proposer shall comply with <br />all federal, state and local rules and regulations regarding food handling, operation of a <br />concession business, and any other laws that would apply to operating a similar type of business. <br />Special attention must be paid to the regulations outlined by the State of Florida, Department of <br />Professional and Business Regulation, Division of Hotels and Restaurants. <br /> <br />City of Sunny Isles Beach I Request for Proposal No. 12-03-02 <br /> <br />
