<br />iv) standards for providing excellent customer service; <br /> <br />v) overall approach in meeting the restaurant operations objectives described in <br />Scope of Services; and <br /> <br />vi) why the proposed concept is the best suited for the City Pier site. <br /> <br />Submit proposed sample menus indicating the variety of food and beverage offerings and <br />the prices to be charged to consumers. <br /> <br />Describe Proposer's approach to food preparation and food display to the customer. <br />Describe Proposer's approach to comply with the Minimum Operating Standards for <br />Foodservice (see Attachment "F'). <br /> <br />Describe Proposer's approach in developing and implementing an on-going marketing <br />program which shall be designed to expand and maintain a customer base from the <br />surrounding area and throughout the region. Describe what means of advertisement the <br />Proposer will be utilizing. <br /> <br />Describe Proposer's approach to project organization and management, and the <br />responsibilities of Proposer's management and staff that will manage and operate the <br />restaurant. <br /> <br />Describe how the Proposer will screen and complete a nationwide criminal background <br />check for its prospective staff (employees and volunteers). <br /> <br />Describe the estimated number of calendar days required to achieve completion. <br /> <br />7. Financial Information <br /> <br />Provide a Pro Forma statement showing 10 years of projected sales and expenses. Inflated <br />statement or statements skewed outside normal operating ranges may be evaluated as less <br />desirable or reasonable Pro Forma statements. (See sample Pro Forma attachment "G".) <br /> <br />Indicate Proposer's investment cost of proposed improvements including kitchen <br />equipment, furniture, fIxtures, etc. that Proposer will install. <br /> <br />Describe Proposer's ability to access and/or provide all the necessary funding to complete <br />proposed improvements, if any, and all start up activities proposed. <br /> <br />Provide documentation demonstrating Proposer's fmancial strength and fmancial capability <br />to provide services. Such documentation should indude Proposer's most recent certified <br />fmancial statements as of a date not earlier than the end of the Proposer's preceding official <br />tax accounting period, with a statement in writing, signed by a duly authorized <br />representative, stating that the present fmancial condition is materially the same as that <br />shown on the balance sheet and income statement submitted, or with an explanation for a <br />material change in the fmancial condition. If certified fmancial statements are not available, <br />provide latest available fmancial statements (balance sheet and income statement) and letters <br />of credit availability from accredited fmancial institutions, or other relevant documentation. <br /> <br />8. Provide a description of your approach to operational functions including Pier <br />parking, valet parking, operation of the Bait/Gift Shop, custodial, maintenance, <br />security and related functions. Provide a description of your approach to a staffing <br />plan for this Project, including a proposed organization chart and position description <br />for each staff classification. <br /> <br />9 <br />
